Black Bean tacos

Full recipe at the bottom of post.

2 cups black beans, cooked
1/2 cup red onion, minced
1 tspn cumin
1 tspn paprika
2 Tbsp cilantro, chopped
8 oz pepper jack cheese, grated
2 Tbsp olive oil
In medium bowl, add beans, red onions, cilantro and spices. Add pinch of salt and lightly mash together. Grate cheese and have ready to go.

Add one tortilla at a time and let it get hot in oil for few seconds. Add couple of scoops of filling to one side of tortilla. Sprinkle top with cheese. Fold tortilla over to form shell.



Ingredients:

1 avocado, sliced
salt and pepper
tortillas
hot sauce
salsa
sour cream

Directions

In medium bowl, add beans, red onions, cilantro and spices. Add pinch of salt and lightly mash together. Grate cheese and have ready to go. In large skillet, add oil over medium heat. Add one tortilla at a time and let it get hot in oil for few seconds. Add couple of scoops of filling to one side of tortilla. Sprinkle top with cheese. Fold tortilla over to form shell. As it cooks, add a second shell to other half of pan. Cook each taco until brown and crispy. Flip taco over toward the fold so your insides don't fall out. Serve with toppings.
